Eat dark greens, and your good bugs get a sugar all to themselves. So they grow fast. They spread across the wall. And they claim the seats that bad bugs wanted.
Germs like Salmonella then show up to a full house. There's no room, and nothing left to eat. Feed the good side that sugar and it stays packed. Skip the greens and the door swings wide. So which leaf hands your bugs the least?

Iceberg is the one to call out. It's about 96% water. A whole cup gives you close to one gram of fiber… and barely a trace of the green-leaf sugar.
Look at the color. Iceberg grows in a tight ball, so the inner leaves hardly see the sun. That sugar is made in the green parts of the leaf. Pale leaf, less sugar.
So your "healthy" iceberg salad hands you crunch and water, while your good bugs get table scraps. The leaves that fix this sit right beside it in the store.

And a 2021 team in Vienna found a bonus. This sugar feeds Eubacterium rectale — one of the ten most common bugs in healthy guts. Fed well, it makes a calming compound that soothes your gut lining. So the swap is simple. Change the base of your bowl.
