The goo in your salad dressing is grown from a plant disease
Flip over a bottle of ranch. Third or fourth line down, past the oil and the water, sits xanthan gum.
The name sounds like a plant. It isn't. Xanthan gum is slime grown in steel vats by a bacterium called Xanthomonas campestris. That bug rots cabbage and broccoli in the field. Farmers spray to kill it. Food plants feed it corn sugar and harvest what it oozes.
Then the slime gets dried, milled to powder, and stirred into your yogurt. And it has sat on those shelves since before your parents could vote.
Gut bacteria were near-blank science back then. A lab in Michigan finally went looking.
They found a gut bug that shows up only where the additive does
Eric Martens and Matthew Ostrowski at the University of Michigan teamed up with Sabina Leanti La Rosa and Phillip Pope in Norway. Their paper ran in Nature Microbiology in April 2022. The team combed stool DNA from people across the map, hunting for the genes that break xanthan gum apart.
Every packaged-food country they checked carried the genes. In one group of adults, 51% of people had them.
Then came the other end of the scale: Hadza hunter-gatherers in Tanzania, Yanomami families in the Amazon, villagers in Burkina Faso. Not one sample held the genes. So what is that bug doing inside the rest of us?
You can't cut this gum, so a stranger cuts it for you
Xanthan gum is a sugar backbone wrapped in side branches. Your digestive enzymes slide right off it. So the gum rides through your stomach and small gut whole, and lands in your colon still in one piece.
Down there, one bacterium from the Ruminococcaceae family carries a scissor enzyme that snips the backbone open. It keeps some sugar and drops the broken bits. A second bug, Bacteroides intestinalis, can't touch the raw gum at all — it lives off those scraps.
One factory powder built a two-species food chain inside you. Hunter-gatherers carry neither link, because nothing in their food asked for one. The additive did the hiring — and it hides in the aisle you trust the most.
Gluten-free eaters get the biggest dose of all
Open your fridge and read four labels. Bottled dressing, yogurt, ice cream, oat milk, protein shakes, sauces, syrups, keto muffins — the gum holds all of it together.
Xanthan gum also replaces the stretch that gluten gave bread. So it goes into nearly every gluten-free loaf, wrap and pizza base on the shelf. Someone with celiac disease can eat this powder three times a day for years. The Michigan team flagged that group by name.
That same powder thickens drilling mud on oil rigs, which tells you how little your body has to do with the job. Past a few grams a day it acts as a laxative — gas, cramps, loose stool. You don't need to fear a label, though. The move is simpler than that. Buy fewer foods that need one.
