Some people get drunk without touching a drink
Picture this. You eat a bagel. An hour later your head spins like you had three beers. But your glass held water.
It sounds made up. Doctors have a name for it though: auto-brewery syndrome. Your gut takes plain starch and turns it into alcohol.
And the odd part? A milder version may be brewing in far more of us than anyone guessed.
So this is no one-in-a-million freak show. Those bugs may sit in ordinary guts — and the lab work shows how they turned up.
A sugar-drunk patient led scientists to the culprit
It began with one baffling man. He got drunk after sugary meals, with no drink in sight. So a team in Beijing, led by Jing Yuan, dug into his gut.
They found a bug called Klebsiella pneumoniae. This strain pumped out four to six times more alcohol than the kind in healthy people. Same sugar in… far more booze out.
Then they tested people with fatty liver disease. The alcohol-making bugs showed up over and over — the link behind that big number above.
A fresh 2026 study in Nature Microbiology backs it up. Stool from these patients brewed far more ethanol than their own housemates' did. So how does a gut bug turn last night's pasta into alcohol you can measure in blood?
Your gut runs the same chemistry as a beer factory
A brewery is simple. Yeast eats sugar. Out comes alcohol. That is the whole trick.
Some gut microbes pull the same move. You feed them fast carbs — white bread, soda, juice — and they ferment that sugar into ethanol right inside you.
That alcohol slips through your gut wall into your blood. Your liver has to mop it up, the same way it mops up a cocktail. Do it once, and it is no big deal. Every single day is a different story — your liver takes a nightly drinker's beating, and fat starts to build.
So the problem is not only the carbs on your plate. It is which microbes run your gut. And a few of them are far worse than the rest.
Meet the three bugs that turn your gut into a still
The loudest one is Klebsiella pneumoniae — the strain from that Beijing study. But it has company.
Brewer's yeast, Saccharomyces cerevisiae, is the same yeast that makes your beer. Candida, a yeast many of us already carry, joins in too. Together they can flip a calm gut into a slow, steady still.
What tips them over? Often a heavy sugar habit, or a round of antibiotics that clears space for them to take over.
Doctors have logged fewer than a hundred full-blown cases. But they think loads more slip past — written off as odd hangovers or brain fog. And that fatty-liver link hints the mild form is anything but rare.
Good news: a still needs fuel. Take the fuel away, and it shuts down.
Starve the brewery: foods it can't ferment
The brewery runs on fast sugar and white starch. So build your plate around foods that give it nothing to work with — and make the yeast's life harder.

Swap your sugary breakfast for a savory one
The brewery is hungriest first thing, when your gut is warm and waiting. A juice-and-cereal breakfast is the perfect morning mash for it. So flip that first meal — and the bugs wake up to an empty tank.
